Our local fig trees are bursting at the seams in late summer, and in this cocktail we proudly flaunt their leaves. You read that right: The abundant fruits are great eaten fresh or preserved, but the leaves, too, have culinary uses. With a distinctive grassy and slightly nutty flavor, the leaves, much like bay or lime leaves, can add nuance to your cooking and cocktailing. – Ginevra Reiff

Fig Leaf Bourbon Sour
Cocktail using fig leaf, bourbon, and aquafaba.

Ingredients
- 1.5 ounces Fig Leaf–Infused Bourbon
- 0.75 ounce Lemon juice
- 0.75 ounce Simple Syrup
- 0.5 ounce Aquafaba
- 1 Fig Leaf
Instructions
- Chill a coupe glass.
- Add the bourbon, lemon juice, simple syrup, and aquafaba to a cocktail shaker. Fill the shaker with ice and shake for 8 to 10 seconds to chill. Strain, discard the ice, return the cocktail to the shaker, and dry shake vigorously for 8 to 10 seconds to generate a foam. Pour into the chilled glass and garnish with the fig leaf.
Notes
Fig Leaf Infused Bourbon
Makes 1½ cups (360 ml)
2 fig leaves
1½ cups (360 ml) Wild Turkey 101 bourbon
Combine the fig leaves and bourbon in an airtight container and let rest for a minimum of 24 hours or up to 48 hours. Strain through a fine-mesh strainer lined with cheesecloth. The infused bourbon will keep in the fridge for 1 to 2 weeks.
