The Actual Veggies Tacos with Raw Tomatillo Salsa

Veggie forward tacos with a raw tomatillo salsa hit the spot.

Ingredients

  • 2 2 Actual Veggies burgers of your choice
  • 1 tsp extra-virgin olive oil
  • 3-4 medium tomatillos
  • 1 garlic clove peeled
  • ½ avocado
  • handful spinach
  • handful cilantro
  • corn tortillas
  • red onion, diced
  • purple cabbage, shredded
  • crumbled vegan cheese
  • salt and pepper to taste

Instructions

  • Cook Actual Veggies burgers by crumbling into a hot skillet for 4-6 minutes.
  • While the burgers are cooking, combine the olive oil, tomatillos, garlic, avocado, spinach and cilantro into a blender, and blend until smooth. Salt and pepper to taste, and put to the side. (salsa will keep for up to 10 days refrigerated)
  • Prepare your corn tortilla as preferred.
  • Assemble tacos with the cooked Actual Veggies burgers, top with reserved salsa, diced red onion, purple cabbage, and crumbled cheese. Enjoy!

The Actual Veggies Wrap

A filling veggie wrap that takes minutes to make.

Ingredients

  • 1 Actual Veggies burger of your choice 
  • spinach
  • clover sprouts
  • avocado
  • large spinach tortilla
  • 2 garlic cloves, minced
  • ¼ cup tahini
  • 1 tsp olive oil
  • ½ lemon, squeezed
  • salt and pepper to taste

Instructions

  • Follow the instructions on the package to prepare the Actual Veggies Burger.
  • While the burger cooks, take the garlic and olive oil and cook in a saute pan over med-low heat until lightly browned. Transfer to a mixer and add the lemon juice and tahini. Blend until smooth. If mixture is too thick, add water to thin. Salt and pepper to taste, set aside.
  • Once your burger is cooked, assemble the wrap by heating the tortilla until pliable. Spread a small amount of the sauce on the tortilla, then layer the patty, spinach, sprouts, and avocado. Fold the outside edges in, and roll tight. Slice in half for easy enjoyment.

The best of both worlds come together in this veggie burger meets salad.

Ingredients

  • 1 Actual Purple Burger
  • 1 tsp olive oil
  • 1 pink grapefruit, peeled and cut into wedges
  • 1 heirloom tomato, large, diced
  • 1 jar pickled carrots, sliced
  • ½ avocado, sliced
  • handful pumpkin seeds
  • handful sunflower seeds
  • ¼ cup avocado oil
  • ¼ cup Champagne vinegar
  • 1 tsp Dijon mustard
  • salt and pepper to taste
  • handful of chopped pistachios
  • crumbled vegan cheese

Instructions

  • Crumble the Actual Purple Burger into a hot skillet with a light amount of olive oil for 4-6 minutes.
  • While the burger is cooking, combine the grapefruit, tomato, pickled carrots, avocado, pumpkin seeds and sunflower seeds in a large bowl, put to the side.
  • To make the dressing, combine the avocado oil, champagne vinegar, dijon mustard, and salt and pepper into a small bowl or jar with a lid, mixed until emulsified.
  • Combine the ingredients from the bowl with your desired amount of dressing, toss, and place in a serving bowl.
  • Top with chopped pistachios, cheese, and cooked Actual Purple Burger crumbs. Enjoy!

The Actual Enchiladas with Cashew Crema and Pico de Gallo

A filling veggie forward enchilada with cashew crema and pico de gallo.

Ingredients

  • 1 Actual Orange Burger
  • 1 Actual Black Burger
  • 4-6 casava tortillas
  • ½ onion, diced and divided
  • 3 garlic cloves, smashed
  • 1 cup water
  • ½ cup cashews
  • juice of half a lemon
  • pinch dried oregano
  • 2 medium tomatoes, diced
  • 1 bunch cilantro, diced finely
  • salt and pepper to taste

Instructions

  • Follow the instructions on the package to prepare the Actual Orange Burger and Actual Black Burger.
  • While cooking, prepare the cashew crema, by taking half of the diced onion, garlic, and water in a small saucepan and cooking until onions are transparent, about 10 min. Once cooked, pour into a blender with cashews, lemon juice, and oregano, blend until smooth. If the crema seems too thick, add more water. Salt and pepper to taste.
  • To prepare the pico de gallo, take the remaining chopped onions, diced tomatoes, and cilantro and mix in a small bowl. Salt and pepper to taste.
  • Once the burgers are cooked to your liking and the crema and pico de gallo are prepared, it’s time to create your dish. Start by heating the cassava tortillas via your preferred method to make the tortilla pliable. Once heated, take the Actual Orange and Black burgers and crumble into the tortillas. Then top with warm cashew crema and the pico de gallo. Enjoy!
