For the salad
- 1 bunch lacinato kale, stems removed and chopped
- 1 can chickpeas, drained and rinsed
- 1 avocado, sliced
- ¼ cup chopped red onion
- ¼ cup chopped parsley
For the dressing
- ¼ cup tahini
- ¼ cup lemon juice
- 1 garlic clove, minced
- salt and pepper to taste
- In a large bowl, combine the chopped kale, chickpeas, avocado, red onion, and parsley.
- In a small bowl, whisk together the tahini, lemon juice, garlic, salt, and pepper until smooth.
